Clam Chowder Recipe

Ingredients
  • 600 ml New potatoes; peeled and cooked
  • 8 Lime wedges; to garnish
  • 45 ml Mild curry powder
  • 40 sm Clams
  • 24 Baby onions; peeled and boiled
  • 350 g Baby sweetcorn
  • 75 g Unsalted butter
  • 1 sm Onion; finely sliced
  • 300F ml Double cream
  • 1 Garlic clove; crushed
  • 1 Apple; sliced
  • Salt & freshly ground black pepper

Directions
  • Step #1 Pour the cream into a small saucepan & cook on a high heat until it has reduced by half.
  • Step #2 In a larger pan, melt half the butter.
  • Step #3 Add the onion, apple, garlic clove & curry powder.
  • Step #4 Saute until the onion is translucent.
  • Step #5 Add the reduced cream & stir well.
  • Step #6 In another saucepan melt the remaining butter & add the baby sweetcorn.
  • Step #7 Cook for 5 mins.
  • Step #8 Increase the heat & add the cream mixture & stock.
  • Step #9 Bring to the boil & serve.
