Classic Bistro Potato Gratin Dauphinoise Recipe

Ingredients
  • 1 tb Dried parsley flakes
  • 1 Bay leaf
  • 3 md Potatoes; peeled & cut into 2-inch pieces
  • 1/4 ts Pepper
  • 6 md Carrots; cut into 2-inch pieces
  • 1 cn tomatoes with liquid; cut up
  • 1 1/2 c sliced onion
  • 1 c Sliced celery; cut into 1-inch pieces
  • 1 cn Condensed beef broth; undiluted
  • 3 tb Quick-cooking tapioca
  • 1 tb Cooking oil; up to 2
  • 1 Garlic clove; minced
  • 1 ts Salt
  • 2 lb Beef stew meat; cut into 1-inch cubes

Directions
  • Step #1 In a Dutch oven, half at a time, brown the beef, in oil.
  • Step #2 Drain.
  • Step #3 Return all meat to pan.
  • Step #4 Add onion, garlic, tapioca, beef broth, parsley, tomatoes, salt pepper & bay leaf.
  • Step #5 Bring to a boil; remove from the heat.
  • Step #6 Cover & bake this at 350 degrees F.
  • Step #7 for 1-1/2 hrs.
  • Step #8 Stir in carrots, potatoes & celery.
  • Step #9 Bake, covered, 1 hr longer or until meat & vegetables are tender.
  • Step #10 Remove bay leaf before serving.
