Classic Chocolate Ganache Recipe

Ingredients
  • 3/4 c Heavy cream
  • 12 oz High-quality bittersweet chocolate; finely sliced
  • 1 tb Cognac; brandy, or liqueur, up to 2

Directions
  • Step #1 What to dip: lb cake cut into bite-sized cubes; large, pitted; fresh clementines, fresh strawberries with stems attached; fresh cherries, peeled & divided into sections; fresh pineapple, cored & cut into bite-sized wedges; dried apricots; glazed oranges, pared, cut into wedges.
  • Step #2 In a medium, heavy-bottomed saucepan, heat the cream until very hot.
  • Step #3 Add the chocolate & let this stand until softened, about 3 mins.
  • Step #4 Add the Cognac & whisk until smooth.
  • Step #5 Transfer to a ceramic fondue pot or ceramic chafing dish & keep warm over a burner.
  • Step #6 Serve as soon as possible, with the dipping ingredients of your choice.
  • Step #7 Yield: 4 to 6 servings Variations: Chocolate-Orange Fondue: Stir the grated zest of 1 orange & 2 tbsps orange-flavored liqueur into the fondue.
  • Step #8 Black Forest Fondue: Stir 2 tbsps finely sliced cherry preserves & 2 tbsps kirsch into the fondue.
  • Step #9 Chocolate Mint Fondue: Stir 1 or 2 tbsps creme de menthe liqueur into the fondue.
