Classic Gazpacho (ff) Recipe

Ingredients
  • 2 lg Tomatoes;
  • 3 c Tomato juice
  • 1/3 c Red wine vinegar
  • 1 md Onion
  • 1/8 ts Hot pepper sauce;
  • 1/4 c Olive oil
  • 1/2 c sliced fresh cilantro
  • 1 lg Roasted red bell pepper;
  • 1 lg Cucumber; peeled, halved lengthwise, seeded

Directions
  • Step #1 Cut 1 tomato, 1/2 cucumber & 1/2 onion into 1-inch pieces and transfer to processor.
  • Step #2 Add bell pepper & puree.
  • Step #3 Transfer to bowl.
  • Step #4 Add tomato juice, vinegar, cilantro, oil & hot pepper sauce.
  • Step #5 Seed remaining tomato.
  • Step #6 Dice remaining tomato & cucumber & onion halves & add to soup.
  • Step #7 Spice up this with salt & pepper.
  • Step #8 put in the fridge.
  • Step #9 (Can be prepared 2 days ahead.
  • Step #10 ) Serve well chilled.
  • Step #11 Serves 6.
