Classic Matzo Balls Recipe

Ingredients
  • 1 pn Sugar
  • === FOR THE FILLING ===
  • 1 Egg yolk
  • 2/3 c Freshly-grated Parmesan cheese
  • 1 c Minced onions
  • Freshly-grated nutmeg; to taste
  • 8 oz Grated Mozzarella cheese
  • Cut into 1" pieces
  • Salt; to taste
  • 1/3 c Olive oil
  • 2 tb Minced fresh basil
  • 2 lb Ripe tomatoes; cored, and
  • Salt; to taste
  • 1 lb Fresh ricotta cheese
  • 4 Basil sprigs; for garnish
  • Freshly-ground black pepper; to taste
  • 2 tb Minced fresh parsley
  • 8 lg Pasta tubes
  • Freshly-ground black pepper; to taste
  • === FOR THE MARINARA SAUCE ===
  • 3 Garlic cloves; minced

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 First, make the marinara sauce.
  • Step #3 In a saucepan heat oil.
  • Step #4 Add onion & cook for 3 mins.
  • Step #5 Add garlic and cook for 2 mins more.
  • Step #6 Add tomatoes, covered, salt and pepper & let simmer, stirring every once in awhile, pinch of sugar, for 20 mins.
  • Step #7 Puree the mixture through the fine disk of a food mill & then return to the saucepan.
  • Step #8 Reduce for 15 mins.
  • Step #9 Meanwhile, make your filling.
  • Step #10 In a bowl mix together ricotta cheese, parsley, nutmeg, Parmesan cheese, minced basil, egg yolk, salt & pepper to taste.
  • Step #11 Fill your manicotti tubes with the filling mixture.
  • Step #12 When all the tubes are filled place them in a baking dish.
  • Step #13 Spoon marinara sauce over the tubes & Sprinkle top with mozzarella cheese.
  • Step #14 (Can be put in the fridged for several hrs or overnight at this point or may be frozen.
  • Step #15 ) When ready to cook, place this in the oven & bake, covered for 20 mins.
  • Step #16 Uncover & bake for 5 to 10 mins longer, or until bubbling and heated through.
  • Step #17 Serve each portion with a sprig of fresh basil.
