Classic Poached Salmon Recipe

Ingredients
  • 1/4 ts Salt
  • 2 tb Granulated sugar
  • 1/2 ts Baking powder
  • 1 tb Stick margarine; melted
  • 1 c All-purpose flour
  • ---CRUST------
  • Cooking spray
  • 1/4 c Fat-free milk

Directions
  • Step #1 --FILLING----- 1 lg Egg 4 lg Egg whites 1 c Dark corn syrup 2/3 c Packed dark brown sugar 1/4 ts Salt 1 c Pecan halves 1 ts Vanilla extract 1.
  • Step #2 To prepare crust, lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 mix flour, granulated sugar, baking powder, & 1/4 tsp salt in a bowl.
  • Step #4 Add milk & margarine; toss with a fork until moist.
  • Step #5 2.
  • Step #6 Press mixture carefully into a 4-inch circle on heavy-duty plastic wrap; cover with extra plastic wrap.
  • Step #7 Roll dough, still covered, to an 11-inch circle.
  • Step #8 Freeze 10 mins or until plastic wrap can be easily removed.

  • Step #10 Remove 1 sheet of plastic wrap; fit dough into a 9-inch pie plate coated with cooking spray.
  • Step #11 Remove a top sheet of plastic wrap.
  • Step #12 Fold edges under; flute.

  • Step #14 preheat your trusty oven to 350.

  • Step #16 To prepare the filling, beat the egg & the next four ingredients (egg through 1/4 tsp salt) at medium speed of a mixer until well-mixed.
  • Step #17 stir in the the pecan halves & the vanilla extract.
  • Step #18 Pour the mixture into the prepared crust.
  • Step #19 Bake the pie at 350 for 20 mins, then cover with foil.
  • Step #20 Bake the pie an extra 20 mins or until a knife inserted 1 inch from the edge comes out clean.
  • Step #21 Do not overbake.
  • Step #22 Cool pie on a wire rack.
  • Step #23 Yield: 10 servings (serving size: 1 wedge) NOTES : Can use butter or margarine.
