Cocoa Peanut Butter Oatmeal Bars Recipe

Ingredients
  • 1 3/4 c Fat free ricotta cheese
  • 1 Egg yolk
  • 1 ts Vanilla extract
  • Sucrose-free whipped topping
  • Fresh orange slices or man- apple juice;
  • 1 pk Unflavored gelatin
  • 1/2 c Orange juice
  • 2/3 c Skim milk
  • 2 tb Powdered sugar
  • 1/2 c Whipping cream
  • Granulated sugar substitute
  • 1/4 ts Ground cinnamon ; darin orange segments in
  • Bs;
  • 3 tb Hershey's Cocoa to equal 1/2 c sugar

Directions
  • Step #1 Diabetics may wish to use a powdered sugar replacement in place of the powdered sugar called for in this recipe.
  • Step #2 (Trish) In a small saucepan, Sprinkle top gelatin over milk.
  • Step #3 let this stand 2 to 3 mins.
  • Step #4 Add cocoa, sugar substitute & egg yolk; beat with whisk until mixed.
  • Step #5 Cook over low heat/flame, stirring constantly, until gelatin is completely dissolved.
  • Step #6 remove this from heat; stir in the vanilla.
  • Step #7 Pour mixture into mixer container; add ricotta cheese & orange juice.
  • Step #8 Cover; mix on medium speed until smooth.
  • Step #9 pour this into medium bowl.
  • Step #10 put in the fridge, stirring every once in awhile, until mixture mounds slightly when dropped from spoon, about 45 mins.
  • Step #11 In small bowl, beat whipping cream & powdered sugar until stiff; fold into chocolate mixture.
  • Step #12 In bowl, stir this together graham cracker crumbs & cinnamon.
  • Step #13 Reserve 1 tbsp for garnish.
  • Step #14 Sprinkle top remaining crumbs on bottom of 8- or 9-inch round cake pan.
  • Step #15 Pour chocolate mixture over crumbs.
  • Step #16 Sprinkle top reserved crumbs over top.
  • Step #17 put in the fridge 4 to 6 hrs or until set.
  • Step #18 Cut into wedges.
  • Step #19 Garnish with whipped topping & sliced orange, if desired.
  • Step #20 Makes 8 servings.
