Coconut And Lemon Syrup Cake Recipe

Ingredients
  • 2 oz Fresh parmesan cheese
  • Salt & pepper
  • 4 oz Crab;
  • 1/4 pt Coconut milk
  • Rocket leaves
  • 1/4 pt Cream
  • 1 Tomato concasse
  • 1 Bay leaf
  • 500 g Arborio rice
  • 1 oz Parsley; sliced
  • 4 Shallots; finely sliced
  • 1 ts Olive oil with a dash of lemon juice
  • 1 ts Virgin olive oil
  • 2 pt Fish stock

Directions
  • Step #1 Saut? the shallots in oil with the bay leaf.
  • Step #2 Before they colour, stir in the arborio rice with a wooden spoon.
  • Step #3 Slowly add the fish stock about one c at a time, allow to cook, stirring, then add another c.
  • Step #4 When the rice is almost cooked, parmesan, add the coconut milk, crab meat, salt & pepper.
  • Step #5 Finish with cream.
  • Step #6 Check the Spice uping, & adjust consistency to your taste.
  • Step #7 Dress the rocket leaves with lemon oil, salt & pepper.
  • Step #8 When you are ready to serve, dress the salad with parsley & the tomato concasse.
  • Step #9 Place the risotto on a plate & top this with the rocket salad.
  • Step #10 Drizzle lemon oil around the plate.
