Coconut And Walnut Oatmeal Bars Recipe

Ingredients
  • 2 Eggs
  • 3/4 c Milk
  • 1 tb Baking powder
  • 1 150 gram pac MAGGI Coconut Milk Powder
  • 3/4 c Oil
  • ----CAKE-------
  • 2 c Flour
  • 2 ts Finely grated lemon rind
  • 3/4 c Caster sugar

Directions
  • Step #1 ---SYRUP------ 1 c Sugar 3/4 c Water 2 tb Lemon juice 1/4 ts Finely grated lemon rind Cake: Preheat the oven to 180 C.
  • Step #2 Line the base of a 22cm round cake tin with baking or waxed paper.
  • Step #3 Sift the flour, baking powder & coconut milk powder into a medium bowl.
  • Step #4 Make a well in the centre of the dry ingredients.
  • Step #5 Place the eggs, oil, sugar & lemon rind in a bowl.
  • Step #6 Beat with a rotary beater or electric mixer for 2 mins.
  • Step #7 stir in the the milk.
  • Step #8 Pour the egg mixture into the well in the dry ingredients & stir until mixd.
  • Step #9 Turn the mixture into the tin.
  • Step #10 Bake in the preheated over for 40-45 mins or until a cake tester inserted into the centre of the cake comes out clean.
  • Step #11 While the cake is cooking, prepare the syrup: Syrup: Place all the ingredients in a saucepan.
  • Step #12 Bring to the boil, stirring, then simmer for 15 mins.
  • Step #13 Leave to cool.
  • Step #14 Remove the cake from the oven & pour half of the cooled syrup over the hot cake.
  • Step #15 Stand in the tin for 15 mins, then turn the cake out & remove the lining paper.
  • Step #16 Place the cake on a serving plate.
  • Step #17 Pour the remaining syrup over the cake before serving.
