Coconut Lime Squares Recipe

Ingredients
  • 500 g Lean lamb mince
  • 1 tb Tomato paste
  • Freshly ground pepper
  • 1 ts Ground cumin
  • 3 tb Lime or lemon juice
  • 2 tb sliced fresh coriander
  • 1/4 c Desiccated coconut
  • 1 tb sliced fresh parsley

Directions
  • Step #1 1.
  • Step #2 Place lamb, coconut, coriander, parsley, cumin, tomato paste, lime or lemon juice & black pepper to taste in a large bowl.
  • Step #3 Mix well to mix.
  • Step #4 Roll tbsps of mixture into balls & push three balls onto a lightly oiled bamboo skewer Repeat with remaining mixture.
  • Step #5 2.
  • Step #6 Cook on lightly oiled pre-heated barbecue grill for 4 to 5 mins each side or until cooked to your liking.
