Coconut Surprise Recipe

Ingredients
  • 180 g Runner beans; frozen
  • 1 Bay leaf
  • 2 ts Turmeric
  • 480 g Cod or salmon fillet; skinned & cut into 4cm cubes
  • 120 ml Curd cheese
  • 1 tb Mild curry powder
  • Salt & freshly ground black pepper
  • 1 lg Onion; sliced
  • 1/2 tb Sunflower oil
  • 450 ml Vegetable stock
  • Coriander for garnish; roughly sliced
  • 1 tb Desiccated unsweetened coconut

Directions
  • Step #1 In a large frying pan or wok, heat the oil & fry the onion until softened.
  • Step #2 Add the bay leaf, turmeric, curry powder & coconut.
  • Step #3 Cook over a gentle heat for 2 mins.
  • Step #4 Pour in the stock & let simmer for 3-4 mins.
  • Step #5 Add the runner beans & let simmer for a further 2 mins, then lay in the fish pieces & Spice up.
  • Step #6 Cover & cook carefully for 2 mins or until the fish is just cooked.
  • Step #7 Meanwhile, mix the curd cheese with a little water to reach the consistency of double cream.
  • Step #8 Pour the curd cheese into the pan, and carefully mix through until piping hot.
  • Step #9 Scatter over the coriander and serve at once with rice.
