Step #1 In a large frying pan or wok, heat the oil & fry the onion until softened.
Step #2 Add the bay leaf, turmeric, curry powder & coconut.
Step #3 Cook over a gentle heat for 2 mins.
Step #4 Pour in the stock & let simmer for 3-4 mins.
Step #5 Add the runner beans & let simmer for a further 2 mins, then lay in the fish pieces & Spice up.
Step #6 Cover & cook carefully for 2 mins or until the fish is just cooked.
Step #7 Meanwhile, mix the curd cheese with a little water to reach the consistency of double cream.
Step #8 Pour the curd cheese into the pan, and carefully mix through until piping hot.
Step #9 Scatter over the coriander and serve at once with rice.
