Coffee Bean Espresso Cookies Recipe

Ingredients
  • 1/2 c Strong brewed coffee
  • Type of coffee liqueur
  • 1/2 c Kahlua; tia maria, or any
  • 1 ts Vanilla
  • 1/4 c Cocoa
  • Chocolate covered espresso beans
  • 1 ts Baking soda
  • 1 ts Vanilla
  • 1/2 c Butter;
  • 1/2 c Buttermilk
  • 2 c Granulated sugar
  • 1/2 c Shortening
  • 2 tb Cocoa
  • 3 1/2 c Unsifted powdered sugar
  • 1/4 c Milk
  • 1/2 c Butter;
  • 2 c All purpose flour
  • 2 Eggs

Directions
  • Step #1 preheat your trusty oven to 400F degrees.
  • Step #2 For frosting: in saucepan, mix butter, cocoa & milk.
  • Step #3 Bring to a boil.
  • Step #4 stir in the vanilla & powdered sugar until frosting reaches proper consistency.
  • Step #5 Brownies: in another saucepan, mix butter, shortening, coffee & liqueur.
  • Step #6 Stir, let boil.
  • Step #7 In a large mixing bowl, mix the flour & sugar.
  • Step #8 Pour butter-shortening over the flour & sugar in bowl.
  • Step #9 Add the buttermilk, eggs, baking soda & vanilla.
  • Step #10 pour this into well buttered 17&1/2-by-11-in.
  • Step #11 Jelly roll pan.
  • Step #12 bake this until brownies test done in center.
  • Step #13 Frost brownies as soon as possible.
  • Step #14 Garnish with espresso beans.
  • Step #15 Let cool until ready to eat, then cut into bars to serve.
