Cold Cucumber Soup Recipe

Ingredients
  • 1 1/4 lb Watercress
  • 1 x Salt, to taste
  • 3 c Half & half
  • 1 1/2 lb Potatoes, instant flakes
  • 1 c Heavy cream
  • 3/4 c Chicken stock
  • 2 1/2 lb Cucumbers, peel,coarse chop

Directions
  • Step #1 Blanch watercress about 15 min.
  • Step #2 In a large mixer, mix a few seconds, half & half & cream, mix chicken stock, then add sliced cucumber & puree.
  • Step #3 Add prepared potatoes & continue until creamy & smooth.
  • Step #4 Chill well before serving.
