Ingredients
  • 1 ts Asian sesame oil
  • 2 ts Minced scallion
  • 1 Whole Boneless skinless chicken breast;
  • === FOR POACHED CHICKEN ===
  • 4 sl Fresh gingerroot; 1/4" thick
  • === FOR GINGER SCALLION OIL ===
  • 2 tb Vegetable oil
  • 1/4 c Scotch or medium-dry Sherry
  • 2 ts Finely-grated peeled fresh gingerroot
  • 2 c Water
  • === ACCOMPANIMENT IF DESIRED ===
  • Cold Sesame Spinach; see Note

Directions
  • Step #1 Note: See the "Cold Sesame Spinach" recipe which is included in this collection.
  • Step #2 Poach chicken: In a 1 1/2-quart saucepan bring water to a boil with gingerroot, Scotch or Sherry, & salt to taste.
  • Step #3 Add chicken and simmer, 12 mins, covered, or until just cooked through.
  • Step #4 Transfer chicken with tongs to a bowl & chill, covered, 20 mins.
  • Step #5 Make ginger scallion oil while chicken is cooling: In a small bowl stir together ginger scallion oil ingredients.
  • Step #6 Halve chicken lengthwise & cut across grain into thin slices.
  • Step #7 Stir oil & spoon over chicken.
  • Step #8 This recipe yields 2 servings.
