Step #1 Note: See the "Cucumber Horseradish Sauce" & "Curried Yogurt Sauce" recipes which are included in this collection.
Step #2 preheat your trusty oven to 500 degrees.
Step #3 Pat the fillet dry & Spice up it with salt & pepper.
Step #4 In an oiled roasting pan roast the fillet in the middle of the oven for 20 to 25 mins, or until a meat thermometer registers 130 degrees for medium-rare meat, & let cool to room temperature.
Step #5 The fillet may be roasted 2 days in advance & kept wrapped & chilled.
Step #6 Slice the fillet crosswise, arrange it on a cutting board or platter, & garnish it with the parsley.
Step #7 Serve the beef with Cucumber Horseradish Sauce & Curried Yogurt Sauce.
