Cold Sesame Noodles Recipe

Ingredients
  • 3 tb Thyme; finely sliced
  • 1/2 c Olive oil
  • 8 Cloves garlic; finely sliced
  • 6 Anchovy filets
  • 1 c Onions; finely sliced
  • 4 c Tomatoes; sliced, seeded, & peeled
  • 1 pn Saffron; optional
  • 3 tb Nicoise olives; finely sliced
  • 3 tb Basil; finely sliced
  • 2 1/2 lb Sea bass; boned & skinned, cut into 6 equal portions
  • 1 ts Chili flakes
  • Salt & pepper to taste
  • 1/2 c White wine

Directions
  • Step #1 Heat a heavy saucepan on high heat, garlic, add 1/4 c olive oil, 2 tbsp thyme, & saute' onions, & chili flakes until onions are translucent.
  • Step #2 Add anchovy filets, cook for another min or two.
  • Step #3 Add tomatoes & saffron & cook for about 10 mins.
  • Step #4 remove this from heat.
  • Step #5 stir in the olives & sliced basil.
  • Step #6 Adjust Spice uping with salt and pepper.
  • Step #7 Spice up fish filets with salt, pepper, & 1/4 c olive oil.
  • Step #8 Brown fish filets on both sides in ovenproof pan or gratin dish, deglaze with white wine.
  • Step #9 Bring to a boil, cover with tomato mixture, & bake for approximately 10 to 15 mins (depending on thickness of fish) in a 400F degree oven.
  • Step #10 Remove dish from oven, allow this to cool, & chill in the refrigerator.
  • Step #11 Before serving, transfer fish to a decorative platter, drizzle with olive oil, & decorate with basil leaves & a few black olives.
  • Step #12 This dish may be made one day in advance.
