Step #1 Wash spinach well, discarding any coarse stems, & drain in a colander.
Step #2 In a 3- to 4-quart saucepan bring water to a boil.
Step #3 Add spinach & steam, covered, 2 mins.
Step #4 Drain spinach in colander, carefully pressing out most of liquid.
Step #5 In a bowl toss spinach with oil, soy sauce & salt & pepper to taste.
Step #6 Chill spinach, uncovered, 25 mins.
Step #7 While spinach is chilling, stirring, until golden, in a dry small heavy skillet (not non-stick) toast sesame seeds over moderate heat, 3 to 5 mins.
Step #8 Toss spinach with sesame seeds & vinegar.
