Ingredients
  • 2 ts Celery sclds
  • 3 1/2 c Medium grated cabbage; red or grcln or a combination of both
  • 2 ts Dijon mustard
  • 1 tb Superfine sugar
  • 2 tb Cider vinegar
  • Salt & freshly ground black pepper
  • 1 c Grated carrot
  • 1/4 c Plus 1 tbsp olive oil

Directions
  • Step #1 In a large bowl mix the grated cabbage & carrot.
  • Step #2 In a small bowl mix the vinegar & sugar, stirring until the sugar dissolves.
  • Step #3 Mix in the mustard, olive oil, salt & pepper.
  • Step #4 Mix in celery sclds.
  • Step #5 Pour the dressing over the cabbage, tossing to coat.
  • Step #6 Cover & chill for 2 hrs before serving.
  • Step #7 Yield: 4 to 6 servings.
