Colin's Lamb Of Love Recipe

Ingredients
  • 9 oz Each all-purpose & cake flour
  • 1 c Egg whites; room temperature
  • 2 ts Vanilla extract
  • 2 ts Baking powder
  • 2 Sticks unsalted butter; room temperature
  • 1 1/2 c Milk; room temperature
  • 21 oz Sugar
  • 3/4 ts Salt

Directions
  • Step #1 Pre-heat the oven to 325F degrees.
  • Step #2 Grease & flour 2 (8 or 9)-inch round pans.
  • Step #3 Sift together the flours & baking powder.
  • Step #4 Cream the butter & sugar in a large mixer bowl until fluffy.
  • Step #5 Add the salt & vanilla & mix well.
  • Step #6 Add the eggs, scraping the sides of the bowl, & mix until light & fluffy.
  • Step #7 Add the flour mixture in 3 batches alternating with the milk, mixing after each addition and ending with the flour.
  • Step #8 Mix just until mixd.
  • Step #9 Do not overmix.
  • Step #10 Pour the batter into the prepared pans.
  • Step #11 Bake 30 to 35 mins or until a toothpick inserted in the center comes out clean.
  • Step #12 Cool the cakes in the pans on wire racks for 15 mins.
  • Step #13 Invert the cakes onto the racks & remove the pans.
  • Step #14 Let the cakes cool completely.
  • Step #15 Wrap & put in the fridge before decorating.
  • Step #16 Yield: 20 servings.
