Collard And Mustard Greens In Ham Hock Gravy Recipe

Ingredients
  • 1/2 Onion; sliced
  • 3 bn Collard greens
  • 1/2 ts Prudhomme poultry or vegetable magic ;
  • 3 Cloves garlic; minced
  • 3 tb Peanut oil
  • 1 sm Hunk o' leftover butt or brisket; sliced

Directions
  • Step #1 (or your own mix of salt, white pepper, pepper, paprika and whatever else you feel like) carefully saute everything but the greens in the oil.
  • Step #2 while waiting, wash the greens & roll them up tightly the long way like cigars.
  • Step #3 starting at the top end, make the thinnest possible slices across the cigar until you reach the stems.
  • Step #4 this will give you a big hairy pile of greens.
  • Step #5 turn the heat up to high & when the pan is good & hot but the garlic hasn't burnt yet, toss in the greens.
  • Step #6 saute on high for a few mins.
  • Step #7 --.
  • Step #8 you can eat 'em like that or hold 'em over a low heat if you need a little time.
  • Step #9 serves 4- 6.
