Colorful Coleslaw Recipe

Ingredients
  • 2 tb Olive or salad oil
  • 1 2/3 c Chicken broth
  • 1/4 c Minced fresh dill or 1 tbsp dried
  • 1/4 ts Freshly ground black pepper
  • 1 lg Clove garlic; mined
  • 1 c Barley; rinsed
  • 1/4 c Minced fresh parsley
  • 1 1/3 c Water
  • 1 c Thinly sliced carrot
  • 1/2 c sliced red onions
  • 1/2 c Thinly sliced radishes
  • 1/2 ts Salt;
  • 3 tb Red wine vinegar
  • 1 c sliced green or red pepper

Directions

  • Step #2 com In a heavy, medium saucepan, bring the broth & water to a boil, and add the barley.
  • Step #3 When the boiling resumes, cover, reduce the heat to low, & simmer for 40-45 mins or until the barley is tender.
  • Step #4 In a large bowl, whisk together al the dressing ingredients.
  • Step #5 When the barley is done, add the barley to the dressing while the barley is still hot.
  • Step #6 Toss, mixing well.
  • Step #7 If you wish to eat the salad warm, put in the fridge the barley to cool, carrot, onion, add the vegetables & herbs & serve as soon as possible, then add the pepper, radishes, otherwise, dill & parsley.
  • Step #8 Toss well, serve at about room temp.
