Concord Grape Pie Recipe

Ingredients
  • 6 tb Olive oil
  • 3 tb sliced fresh mint or basil
  • 4 sm Zucchini; about 1 1/2 lbs total weight, up to 6
  • 4 tb Red or white wine vinegar
  • 2 tb sliced fresh flat-leaf parsley
  • 2 lg Clov garlic; minced
  • Salt

Directions
  • Step #1 Cut the zucchini into 1/4-inch thick slices, or to prepare it Veneto fashion, cut the zucchini lengthwise into 1/4-inch thick slices.
  • Step #2 Sprinkle top with salt & let this stand in a colander for 30 mins to drain off any bitter juices.
  • Step #3 Rinse & pat dry.
  • Step #4 In a small bowl, parsley, mix the mint or basil, & garlic.
  • Step #5 Warm the olive oil in a frying pan over medium high heat.
  • Step #6 In batches, turning as needed, add the zucchini & cook, until golden on both sides, 4 to 5 mins.
  • Step #7 Transfer to a shallow serving dish & Sprinkle top with some of the mint mixture & some of the vinegar.
  • Step #8 Repeat with the rest of the zucchini, mint mixture & vinegar.
  • Step #9 Leave at about room temp for 1 to 2 hrs, basting every once in awhile with vinegar in the dish, before serving.
  • Step #10 Yield: 4 servings.
