Congril Habanero Con Basmati Rice Recipe

Ingredients
  • 1 lg Onion; sliced
  • 1 ts Capers
  • 1 cn Chicken broth
  • 2 tb Balsamic vinegar
  • 1 tb Minced garlic
  • 2 tb sliced olives
  • 1 tb Butter
  • 2 c Water
  • Salt & pepper to taste
  • 1/3 c Olive oil
  • 2 cn Spanish-style red kidney beans; with liquid
  • 1 1/2 c Long-grain white rice; rinsed
  • 2 Green peppers; sliced
  • 1 cn Plain kidney beans; drained

Directions
  • Step #1 Heat olive oil in large pan over medium-high heat.
  • Step #2 Add onion, green peppers, olives, capers & garlic.
  • Step #3 Add salt & pepper, rice and butter to pan.
  • Step #4 Saute on low to medium heat for 10 mins.
  • Step #5 mix chicken broth, water & 1/4 c liquid from plain kidney beans.
  • Step #6 Add to rice & vegetable mixture.
  • Step #7 Bring to a boil.
  • Step #8 Stir, reduce heat, & let simmer covered for approximately 20 mins.
  • Step #9 stir in the Spanish-style kidney beans with their liquid, & the drained, plain red kidney beans.
  • Step #10 May be served with balsamic vinegar to taste.
