Chinese Creamy Corn Soup Recipe

Ingredients
  • 4 c chicken broth
  • 4 slices crisp cooked bacon, crumbled
  • 1/4 c water
  • 2 tbsps cornstarch
  • 2 egg whites
  • 1/4 tsp salt
  • 1 tbsp sherry
  • 1/2 lb skinless, boneless chicken breast meat - finely sliced
  • 1 (14.75 oz) can cream-style corn
  • 2 tsps soy sauce

Directions
  • Step #1 Mince chicken.
  • Step #2 Mix together with sherry, salt, & egg whites in a large mixing bowl.
  • Step #3 Add cream style corn, & mix well to mix.
  • Step #4 Preheat a wok or large frying pan to medium high.
  • Step #5 Add chicken broth & soy sauce, & bring to a boil.
  • Step #6 Add chicken mixture, & return to boil.
  • Step #7 Reduce heat.
  • Step #8 Simmer for 3 mins, stirring frequently to prevent burning.
  • Step #9 In a c, mix together water & cornstarch until well mixed.
  • Step #10 Add cornstarch mixture to simmering soup, stirring constantly.
  • Step #11 Cook for an extra 2 mins; soup will thicken slightly.
  • Step #12 Crumble cooked bacon over individual servings.
