Coriander (cilantro) Vinaigrette Recipe

Ingredients
  • 225 g Self-raising flour
  • 100 g Bacon or cooked meat; sliced
  • Salt & freshly ground black pepper
  • 4 Leeks; sliced
  • SUET PASTRY---
  • 1/4 ts Salt
  • 75 g SuetFilling:;

Directions
  • Step #1 To make the suet crust, sift the flour with the salt & stir in the the suet.
  • Step #2 Add enough water to make a soft, slightly sticky dough.
  • Step #3 Knead briefly, dusting with flour to get a smooth, elastic dough.
  • Step #4 Roll out on a generously floured board to a thickness of about 5mm.
  • Step #5 Blanch the leeks in boiling water for 1 min.
  • Step #6 Drain thoroughly.
  • Step #7 To cook the pudding in a pressure cooker, line a shallow basin or colander with a large square of silver foil.
  • Step #8 Line this with the suet pastry, then place the sliced leeks (and bacon or meat, if using) inside & Spice up generously.
  • Step #9 Lightly flip the pastry over to cover the filling loosely.
  • Step #10 Don't worry about sealing the pastry tightly - as it cooks it will rise & seal itself.
  • Step #11 Wrap the pudding loosely with silver foil.
  • Step #12 Fill the pressure cooker with water to a depth of 5-7.
  • Step #13 5cm, stand the pudding inside, heat & when hot, cover tightly & cook for 15-20 mins.
