Step #3 Melt the butter in medium frypan & add the corn kernels & 'Hot Green Chilli Sauce'.
Step #4 Mix carefully until the butter & chilli sauce are mixd then remove this from the heat & cool slightly.
Step #5 Add the buttermilk & eggs & cool thoroughly.
Step #6 Whisk the polenta grains, sugar, flour, baking powder, salt and baking soda in large bowl then add the buttermilk mixture & mix carefully, just mixing until the flour has been moistened.
Step #7 Do not overmix.
Step #8 Add the sliced chives then divide the batter amongst the prepared muffin c Bake in the preheated oven for 20 mins or until a tester inserted into a muffin comes out clean.
Step #9 remove this from the oven & cool on a wire rack.
