Corn And Herb-bread Sausage Stuffing Recipe

Ingredients
  • 3 tb Loves Pantry Hot Green Chilli Sauce
  • 1 c Buttermilk
  • 2 lg Eggs
  • 1 c Frozen or canned corn kernals
  • 2 tb Sugar
  • 1 c Plain flour
  • 2 ts Baking powder
  • 1 bn Chives; finely sliced
  • 1 ts Salt
  • 125 g Butter
  • 1 c Yellow polenta grains
  • 1/2 ts Baking soda

Directions
  • Step #1 Preheat the oven to 200?c.
  • Step #2 & butter a 12-c muffin tray.
  • Step #3 Melt the butter in medium frypan & add the corn kernels & 'Hot Green Chilli Sauce'.
  • Step #4 Mix carefully until the butter & chilli sauce are mixd then remove this from the heat & cool slightly.
  • Step #5 Add the buttermilk & eggs & cool thoroughly.
  • Step #6 Whisk the polenta grains, sugar, flour, baking powder, salt and baking soda in large bowl then add the buttermilk mixture & mix carefully, just mixing until the flour has been moistened.
  • Step #7 Do not overmix.
  • Step #8 Add the sliced chives then divide the batter amongst the prepared muffin c Bake in the preheated oven for 20 mins or until a tester inserted into a muffin comes out clean.
  • Step #9 remove this from the oven & cool on a wire rack.
