Corn, Green Bean And Tomato Salad Recipe

Ingredients
  • 2 pk Arugula; stems trimmed, leaves sliced
  • 2 tb Balsamic vinegar
  • 4 Celery stalks; sliced
  • 1/2 Red onion; sliced
  • 2 3/4 c Fresh corn kernels or frozen; thawed, drained
  • 1 Basket cherry tomatoes; halved
  • 1 c Crumbled blue cheese;
  • 1/3 c Olive oil

Directions
  • Step #1 mix first 5 ingredients in large bowl.
  • Step #2 Place vinegar in small bowl; slowly mix in oil.
  • Step #3 Spice up this with salt & pepper.
  • Step #4 Add 3/4 c blue cheese.
  • Step #5 Pour dressing over salad & toss to coat.
  • Step #6 Garnish with remaining 1/4 c cheese.
  • Step #7 (Can be prepared 4 hrs ahead.
  • Step #8 Cover and chill.
