Corned Beef With Horseradish Mustard Sauce Recipe

Ingredients
  • 4 qt Hot water
  • 1 1/2 ts Saltpeter
  • 2 tb Pickling spice
  • 2 c Coarse salt
  • 1/4 c Sugar

Directions
  • Step #1 This is the recipe, from 'Joy of Cooking', that I use: Mix above ingredients, & let cool.
  • Step #2 Pour over 5 lbs.
  • Step #3 piece of brisket or other cut.
  • Step #4 Add 3 cloves garlic, & weigh down to keep submerged.
  • Step #5 Cure in refridgerator 3 weeks, turning every 5 days.
  • Step #6 To store, dry, & hang in a cool, wash, wrap in heavy paper, dry place.
