Ingredients
1/3 c Finely sliced prosciutto
3 Cornish game hens;
1 1/2 c Canned chicken broth
1 c Low-fat mayonnaise
1 bn Watercress
5 ts sliced fresh rosemary
3 tb Apricot fruit spread
6 tb Butter; room temperature
2 1/2 ts Dijon mustard
Directions
Step #1 preheat your trusty oven to 400F.
Step #2 mix butter, 3 tbsps prosciutto, 2 1/2 tsps rosemary & 1 1/2 tsps mustard in bowl.
Step #3 Spice up this with salt & pepper.
Step #4 Run fingers under skin over breast of each game hen, loosening skin from meat.
Step #5 Rub 1 tbsp butter mixture under skin over breast of each hen.
Step #6 Sprinkle top hens inside & out with salt and pepper.
Step #7 Place 1 tsps butter mixture in each cavity.
Step #8 Truss hens with kitchen string.
Step #9 Place hens on rack in large roasting pan.
Step #10 Pour 1/3 c broth over hens.
Step #11 Dot each hen with 1 tsp butter mixture.
Step #12 Roast hens 30 mins, basting with remaining broth & butter every 10 mins.
Step #13 Continue roasting without basting until juices run clear when thigh is pierced at thickest part, about 30 mins more.
Step #14 Reserve 1/4 c pan juices.
Step #15 Cool hens.
Step #16 Cut each hen in half.
Step #17 Mix mayonnaise, remaining prosciutto, apricot spread, rosemary and mustard, & 1/4 c pan juices in small bowl.
Step #18 (Hens & sauce can be made 1 day ahead.
Step #19 Cover & chill.
Step #20 ) Arrange watercress on large platter.
Step #21 Arrange hens atop.
Step #22 serve this with sauce.
