Ingredients
2 Cornish game hens - ; thawed if frozen
3 c Whole-wheat bread cubes -;
1/2 c Currant jelly
Ground black pepper
1/3 c Orange juice; divided
1 ts Ground cinnamon; divided
Salt
1 tb Orange juice
1 ds Ground cloves
1/4 c Pecans; coarsely sliced
2 Peaches; peeled, sliced
Directions
Step #1 Wash hens; pat dry.
Step #2 Sprinkle top inside & out with salt & pepper.
Step #3 Twist wing tips under back & tie legs to tail.
Step #4 We cooked in a covered gas grill over med-heat/flame, but we see no reason you cannot use a preheated 350 degree oven.
Step #5 If using the grill, place the hens breast-sides up on a rack in a roasting pan.
Step #6 Cover & grill for 1 hr & 15 mins.
Step #7 While the birds are cooking, make the glaze by combining 1 tbsp orange juice with the currant jelly & 1/2 tsp cinnamon.
Step #8 In the last 20 mins of cooking, brush the hens 2 or 3 times with the glaze, being sure to turn over to coat the back.
Step #9 Also add the dressing for the last 20 mins.
Step #10 To make the dressing, mix in a medium bowl the bread cubes, pecans, peaches, remaining 1/2 tsp cinnamon & cloves.
Step #11 add in the remaining 1/3 c orange juice, stirring until the bread is moistened.
Step #12 Place on a double-thick wrapping of aluminum foil.
Step #13 Fold the edges over to cover the dressing, but leave a little space for the dressing to expand as it cooks.
Step #14 put in the fridge until ready to cook.
Step #15 If you have a rack on your grill, place the dressing there.
Step #16 Otherwise, place it in the pan next to the birds.
Step #17 The recipe will serve two, probably with enough left over for the next day's lunch.
Step #18 You can substitute apples & apple juice for the peaches & orange juice.
