Step #2 Remove breast & leg from hens and debone the thigh.
Step #3 Spice up this with allspice, olive oil, black caraway seeds, salt & pepper.
Step #4 Squeeze lemon juice over the meat.
Step #5 Pan sear hens, skin-side down, on high heat for one min.
Step #6 Turn & do the same to the other side.
Step #7 Remove breast & cook leg & thigh for an extra min.
Step #8 Place hens in baking pan & bake for approximately six to eight mins.
Step #9 Add sliced apples to same pan with one tbsp butter & heat through.
Step #10 Add cinnamon, honey, tarragon & lemon zest, wine, then simmer for two mins or until reduced by half.
Step #11 Place apples on plate with some of the juice from the pan, thigh & leg, top this with one breast, then finish with a rosette of Vanilla Date Pure.
