Cornish Hens With Rum Recipe

Ingredients
  • 1 tb Ground dry oregano
  • 1 tb Dry; ground thyme
  • 4 Cornish hens -;
  • 1/4 sliced fresh parsley
  • 3 tb Soft butter
  • 1 sm Green pepper; seeded, sliced fine
  • 2 c Cold; cooked white rice
  • 3 tb Olive oil
  • 2 Garlic cloves - ; sliced
  • 1/2 c sliced chicken gizzards
  • 1/2 lb Chicken livers; sliced
  • Freshly-ground black pepper; to taste
  • Salt - to taste
  • 1 c sliced white onions
  • 1 c Sausage meat; casings removed

Directions
  • Step #1 preheat your trusty oven to 375 degrees.
  • Step #2 In a large saute pan, heat olive oil.
  • Step #3 Add onions & green pepper & saute.
  • Step #4 Add sausage meat & cook for about 5 mins.
  • Step #5 Add livers & gizzards & cook for an extra 5 mins.
  • Step #6 Add garlic, oregano, thyme & parsley.
  • Step #7 mix & cook for 2 more mins.
  • Step #8 Remove mixture from the heat & cool thoroughly.
  • Step #9 mix stuffing with rice.
  • Step #10 Divide & stuff hens as soon as possible prior to cooking.
  • Step #11 Tie legs closed.
  • Step #12 Brush hens with butter & Spice up this with salt & pepper.
  • Step #13 Roast for 1 hr & 15 mins or until hens are cooked & temperature of stuffing is 155 degrees.
