Cornish Hens With Couscous And Figs Recipe

Ingredients
  • 1 sm Onion; sliced
  • 1/4 c Chicken stock or canned broth
  • 1 tb sliced fresh parsley
  • 3/4 ts Dried rubbed sage
  • 1 tb Vegetable oil
  • --STUFFING-----
  • 1/3 c sliced celery
  • 2 c Crumbled corn muffins or corn bread;
  • 1 c sliced ham;

Directions
  • Step #1 ----HENS------- 2 Cornish game hens; halved -lengthwise 1 1/2 ts Dijon mustard For Stuffing: Heat oil in heavy medium skillet over med-heat/flame.
  • Step #2 Add onion and celery; saute until onion is translucent, about 5 mins.
  • Step #3 Mix in remaining ingredients; stir until heated through.
  • Step #4 Remove skillet from heat.
  • Step #5 Spice up stuffing with salt & pepper.
  • Step #6 Cool slightly.
  • Step #7 For Hens: preheat your trusty oven to 375F.
  • Step #8 Grease 13 x 9x2-inch baking dish.
  • Step #9 Spice up hens with salt & pepper.
  • Step #10 Place skin side down on work surface.
  • Step #11 Pack 1/4 of stuffing into each cavity.
  • Step #12 Arrange hens stuffing side down in prepared dish.
  • Step #13 Brush with mustard.
  • Step #14 Roast hens until golden brown and juices run clear when thighs are pierced, about 45 mins.
  • Step #15 Transfer hens to platter & serve.
