Cornish Hens With Pomegranate And Garlic Potatoes Recipe

Ingredients
  • 1/4 ts Dried thyme
  • 1/4 ts Garlic powder
  • 12 oz Baby carrots; scraped
  • Fresh thyme sprigs; optional
  • 1/2 ts Dried rosemary
  • 1 tb All-purpose flour
  • 1/2 c Minced green onions
  • 1 ts Coarsely ground pepper
  • 3/4 c Dry white wine
  • 3/4 c Water
  • 1/4 c Minced carrot
  • 1/2 lb Fresh mushrooms; halved
  • Vegetable cooking spray
  • 1 Bay leaf
  • 2 Stalks celery; cut diagonally into 1-inch pieces
  • 4 Cornish hens; skinned
  • 1/2 ts Chicken-flavored bouillon granules
  • 1 ts Vegetable oil

Directions
  • Step #1 1.
  • Step #2 Coat a large nonstick skillet with cooking spray; add oil.
  • Step #3 Place over medium-high heat until hot.
  • Step #4 Add green onions & minced carrot; saute until crisp-tender.
  • Step #5 2.
  • Step #6 stir in the flour.
  • Step #7 Cook over med-heat/flame, stirring constantly, 1 min.
  • Step #8 stir in the wine & next 7 ingredients.
  • Step #9 Bring to a boil.
  • Step #10 Reduce heat; simmer 5 to 10 mins, stirring frequently.

  • Step #12 Remove giblets from hens; reserve for another use.
  • Step #13 Rinse hens with cold, running water, & pat dry.
  • Step #14 Split each hen in half lengthwise, using an electric knife.
  • Step #15 Sprinkle top with pepper.

  • Step #17 Place hens, cut side down, in a roasting pan coated with cooking spray.
  • Step #18 Spoon mushroom mixture over hens.
  • Step #19 Cover & bake this at 350 degrees for 45 mins, basting frequently.

  • Step #21 Add baby carrots & celery.
  • Step #22 Cover & bake an extra 20 mins or until vegetables are crisp-tender & hens are done.
  • Step #23 Remove & discard bay leaf.
  • Step #24 Garnish with thyme sprigs, if desired.
