Cornish Hens With Red Wine Sauce Recipe

Ingredients
  • 8 tb Extra-virgin olive oil; divided
  • 1 tb Hot paprika
  • 1 tb Coriander seeds; toasted, crushed
  • Lengthwise; sliced into 1/4" half-moons
  • 4 tb Red wine vinegar
  • 4 Garlic cloves; finely minced
  • 4 Russet potatoes; peeled, halved
  • 1 tb Cumin seeds; toasted, crushed
  • 8 Cornish hens; backbone removed,
  • 1 tb Black peppercorns; crushed
  • 4 tb Pomegranate molasses
  • Split & flattened

Directions
  • Step #1 Check hens for quills & feathers & place breast side up in a shallow dish.
  • Step #2 In a small bowl, mix together pomegranate molasses, coriander, cumin, peppercorns & 4 tbsps of the olive oil until mixed & pour over hens.
  • Step #3 Allow to marinate in refrigerator for 1/2 hr.
  • Step #4 Turn hens over & marinate an extra half hr.
  • Step #5 Preheat grill.
  • Step #6 In a 12- to 14-inch saut? pan, heat the remaining 4 tbsps olive oil over high heat until smoking.
  • Step #7 Add garlic, then potatoes and, cook this until golden brown, stirring quickly, about 7 to 8 mins.
  • Step #8 Add paprika & vinegar & cook this until vinegar evaporates, less than 1 min.
  • Step #9 Meanwhile, remove hens from marinade & place on grill.
  • Step #10 cook this until just pink at the leg bone, about 10 to 12 mins per side.
  • Step #11 Place potatoes on serving tray, place hens on top & serve.
