Ingredients
4 Cornish hens; split in half
Down the back
1 c Dry red wine
1/2 c sliced turnips
1/2 c Canned plum tomatoes; drained, crushed
2 c Chicken stock
1 c Peeled pearl onions;
Freshly-ground black pepper; to taste
3 tb Pure olive oil
1/4 c Crumbled crisp-fried bacon
Salt; to taste
1/2 c sliced carrots
2 tb Dried thyme
3 Garlic cloves; crushed
Directions
Step #1 Preheat the oven to 350 degrees.
Step #2 Heat the olive oil in a large, deep skillet.
Step #3 Spice up the chicken halves with the salt & pepper & brown well on both sides before removing & placing in an ovenproof casserole.
Step #4 To the skillet in which you cooked the chicken, add the onions, turnips, carrots, thyme & garlic & saute until the vegetables begin to wilt.
Step #5 Add the red wine, plum tomatoes & chicken stock to the vegetables & cook 10 mins over med-heat/flame.
Step #6 Pour the vegetable mixture over the chicken in the ovenproof casserole and bake 1 1/4 hrs.
Step #7 When the chicken has finished baking, add the cooked, crumbled bacon to the casserole & serve this with chive mashed potatoes.
Step #8 This recipe yields 4 servings.
