Cornish Hens With Wild Rice Recipe

Ingredients
  • 4 Cornish hens; split in half
  • Down the back
  • 1 c Dry red wine
  • 1/2 c sliced turnips
  • 1/2 c Canned plum tomatoes; drained, crushed
  • 2 c Chicken stock
  • 1 c Peeled pearl onions;
  • Freshly-ground black pepper; to taste
  • 3 tb Pure olive oil
  • 1/4 c Crumbled crisp-fried bacon
  • Salt; to taste
  • 1/2 c sliced carrots
  • 2 tb Dried thyme
  • 3 Garlic cloves; crushed

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 Heat the olive oil in a large, deep skillet.
  • Step #3 Spice up the chicken halves with the salt & pepper & brown well on both sides before removing & placing in an ovenproof casserole.
  • Step #4 To the skillet in which you cooked the chicken, add the onions, turnips, carrots, thyme & garlic & saute until the vegetables begin to wilt.
  • Step #5 Add the red wine, plum tomatoes & chicken stock to the vegetables & cook 10 mins over med-heat/flame.
  • Step #6 Pour the vegetable mixture over the chicken in the ovenproof casserole and bake 1 1/4 hrs.
  • Step #7 When the chicken has finished baking, add the cooked, crumbled bacon to the casserole & serve this with chive mashed potatoes.
  • Step #8 This recipe yields 4 servings.
