Cream Of Broccoli Soup Recipe

Ingredients
  • 2 tbsps chicken bouillon powder
  • 1/2 c shredded sharp Cheddar cheese
  • 1/4 tsp ground black pepper
  • 1 large stalk celery, sliced
  • 4 c broccoli florets
  • 1 onion, sliced
  • 2 tbsps margarine
  • 1/4 tsp ground nutmeg
  • 4 c water
  • 1/3 c all-purpose flour
  • 2 1/2 c whole milk

Directions
  • Step #1 In a medium-sized cooking pot, add water & broccoli florets & bring to boil; reduce heat & cook for about 3 mins.
  • Step #2 Drain, reserving all of the water.
  • Step #3 In a food processor/blender or mixer, process half the cooked broccoli until fairly smooth.
  • Step #4 Chop remaining broccoli & set aside.
  • Step #5 In a heavy-bottomed cooking pot, melt butter or margarine, add onion & celery & cook for about 3 to 4 mins until soft.
  • Step #6 Stir in flour; cook, stirring constantly for about 1 to 2 mins.
  • Step #7 Add reserved water & chicken bouillon granules, & bring to boil, stirring constantly.
  • Step #8 Reduce heat to medium; simmer, stirring constantly until thickened.
  • Step #9 Stir in milk, nutmeg, pepper, & processed & sliced broccoli, & heat through.
  • Step #10 Adjust seasonings to taste.
  • Step #11 Serve garnished with grated cheddar cheese.
