Cornmeal Crusted Chicken Recipe

Ingredients
  • 1 Stick Cold unsalted butter; cut into pieces
  • 1 ts Salt
  • 2 1/2 c Cornmeal flour
  • 6 tb Solid vegetable shortening; cold
  • 5 tb Ice water; to 6 tbsps

Directions
  • Step #1 mix the flour & salt in a mixing bowl.
  • Step #2 Using your hands work the butter & shortening into the flour, until the mixture resembles coarse crumbs.
  • Step #3 Sprinkle top the ice water over the mixture 1 or 2 tbsps at a time.
  • Step #4 Gather the dough into a ball.
  • Step #5 Turn the dough onto a floured surface.
  • Step #6 Using the heel of your hand knead the dough, this will mix the butter & shortening & make the pastry flakier.
  • Step #7 put in the fridge for 30 mins.
  • Step #8 Roll the dough out onto a floured surface into a circle 14-inches in diameter & 1/8-inch thick.
  • Step #9 carefully fold the circle of dough in half & then in half again so that you can lift it without tearing it, & unfold into a 9-inch tart pan.
  • Step #10 This recipe yields one 9-inch cornmeal crust.
