Costolette Di Manzo Triato (ground Beef Cutlets) Recipe

Ingredients
  • 1 sm Onion; finely sliced
  • 115 g Quick-cook couscous
  • 115 g Small chestnut mushrooms; sliced
  • 1 ts Paprika
  • 1 Red & 1 yellow pepper
  • 2 Garlic cloves; peeled
  • 1/2 ts Ground cumin & coriander
  • Salt & freshly ground black pepper
  • 115 g Feta cheese; cut into cubes
  • Olive oil for cooking
  • 1 400F gram can sliced tomatoes;
  • 1 bn Spring onions; finely sliced
  • 1 Red chilli

Directions
  • Step #1 preheat your trusty oven to 220c/425f/Gas 7 & heat a large frying pan.
  • Step #2 1 Cut the peppers in half, keeping the stalks intact.
  • Step #3 Brush all over with a little oil & place this in a baking dish, cut-side up.
  • Step #4 2 Cover loosely with foil & bake for 18-20 mins until tender and lightly charred.
  • Step #5 3 Add 2 tbsp oil to to the heated frying pan & tip in the onion.
  • Step #6 Stir-fry for 2-3 mins until softened & just beginning to brown.
  • Step #7 4 Rub a little oil into your hands, cut the chilli in half, remove the seeds & finely dice the flesh.
  • Step #8 5 Crush a garlic clove into the pan & add half the chilli, cumin, coriander & paprika.
  • Step #9 Cook for another min, stirring.
  • Step #10 6 Place 120ml/4fl oz boiling water in a pan with 1 tsp oil & 1/2 tsp salt.
  • Step #11 Simmer, remove this from the heat & stir in the the couscous.
  • Step #12 Set aside for two mins to allow the grains to swell.
  • Step #13 7 Raise the heat of the onion mixture & tip in the mushrooms.
  • Step #14 Stir-fry for 2-3 mins until just tender.
  • Step #15 8 Remove pan from the heat & Spice up to taste.
  • Step #16 Heat a small pan.
  • Step #17 Return the couscous to the heat & add 1 tbsp oil.
  • Step #18 9 Cook carefully for 2-3 mins, stirring with a fork to fluff up the grains.
  • Step #19 Spice up to taste.
  • Step #20 10 Pour 1 tbsp oil in the heated pan.
  • Step #21 Add the remaining half of chilli & spring onions.
  • Step #22 Crush in the remaining garlic clove and cook for a min, stirring.
  • Step #23 11 Pour in the tomatoes, add a handful of herbs & a dash of oil.
  • Step #24 mix to a fairly smooth sauce.
  • Step #25 Spice up & continue to simmer over a gentle heat.
  • Step #26 12 Cut the feta cheese into 1cm/ 1/2" dice.
  • Step #27 Tip the cooked couscous into the mushroom mixture & stir until well mixd.
  • Step #28 stir in the the feta cheese & pile some into the two pepper halves.
  • Step #29 13 Arrange the filled pepper halves on a serving plate, drizzle around some of the tomato sauce & serve.
