Country Green Beans And Ham Recipe

Ingredients
  • 1 md Onion; sliced
  • 1 Clove garlic; crushed
  • Salt & pepper
  • 1 tb Tomato puree
  • 6 oz Green lentils
  • 2 Carrots; sliced
  • 1 pn Cayenne;
  • 4 oz Grated vegetarian cheddar cheese
  • 1 ts Dried basil
  • 2 lb Potato; mashed
  • 4 oz Mushrooms; sliced
  • 1 md Green pepper; sliced
  • 2 tb Vegetable oil

Directions
  • Step #1 1.
  • Step #2 Cook the lentils in plenty of water until just soft, drain, but save 1/2pint of the cooking liquid.
  • Step #3 2.
  • Step #4 While the lentils are cooking saute the onion, garlic, basil and cayenne in the oil until soft but not brown.
  • Step #5 3.
  • Step #6 Add the carrot, pepper & mushrooms.
  • Step #7 Cover & cook over a low heat for 10 mins or until the carrot has softened.
  • Step #8 4.
  • Step #9 Add the cooked lentils, tomato pur&ecute;e & Spice uping.
  • Step #10 If the mixture is very thick add a little of the reserved cooking liquid from the lentils.
  • Step #11 5.
  • Step #12 Cook for a further five mins, transfer to an oven-proof dish, cover with mashed potato & Sprinkle top the grated cheese on top.
  • Step #13 6.
  • Step #14 Bake for 30 mins in a moderate oven, until the top is golden brown.
  • Step #15 Follow with Greek yogurt served with honey & sliced nuts.
