Ingredients
2 c Milk
2 tb Butter
1 ts Salt
4 c Plus 2 tbsps all-purpose flour;
1 c Grated white cheddar cheese
4 oz Smithfield or any other country ham; small sliced
Salt
Freshly ground black pepper
1/8 ts Freshly ground black pepper
1 c Plus 1 tsp vegetable shortening
10 lg Eggs
1 1/2 tb Baking powder
Directions
Step #1 Preheat the oven to 350 degrees F.
Step #2 Lightly grease a baking sheet with 1 tsp of shortening.
Step #3 In a large mixing bowl, pepper, salt, baking powder, mix 4 c flour, ham & cheese.
Step #4 Mix well.
Step #5 Add the remaining shortening & work it into the dry ingredients, using your hands, until the mixture resembles coarse crumbs.
Step #6 Fold in 1 1/2 c of the milk.
Step #7 The dough with be sticky.
Step #8 Dust your work surface with 1 tbsp of the flour.
Step #9 Turn the dough onto the floured surface.
Step #10 carefully fold each side towards the center.
Step #11 Pick up the dough & dust the work surface with the remaining tbsp flour.
Step #12 Return the dough to the floured surface & fold each side towards the center again.
Step #13 Turn the dough over & light press it out to 1 inch thickness.
Step #14 Cut the biscuits using a 2 1/4 inch round cookie cutter.
Step #15 Place them on the baking sheet & bake this until golden, about 30 mins.
Step #16 In a medium mixing bowl, whisk the eggs & remaining eggs together.
Step #17 Whisk well.
Step #18 Spice up this with salt & pepper.
Step #19 In a large non-stick saute pan, over med-heat/flame, melt the butter.
Step #20 Add the eggs, using a rubber spatula, stir the eggs & cook this until the eggs are a soft scramble.
Step #21 remove this from the pan.
Step #22 Slice the biscuits in half and place a spoonful of the eggs in the center of each biscuit.
Step #23 Yields: 8 servings.
