Country Ham With Red-eyed Gravy And Creamy Grits Recipe

Ingredients
  • 1 c Sour cream
  • 1/3 c Buttermilk; up to 1/2
  • 1 Egg
  • 2 c Self-rising flour
  • 1/4 c Margarine or butter
  • Margarine or butter; melted, if desired
  • 1 1/2 c Finely sliced cooked ham

Directions
  • Step #1 Heat oven to 425F degrees.
  • Step #2 Scramble egg until cooked; cool slightly.
  • Step #3 Cut one-four c margarine into flour in large bowl until mixture resembles fine crumbs.
  • Step #4 stir in the buttermilk, sour cream, ham and scrambled egg until soft dough forms.
  • Step #5 Turn dough onto lightly floured surface.
  • Step #6 Knead 3 or 4 times.
  • Step #7 Roll dough 3/4 inch thick.
  • Step #8 Cut with floured 2 1/2 inch biscuit cutter.
  • Step #9 Place about 1 inch apart on ungreased cookie sheet.
  • Step #10 Bake 11 to 15 mins or until light golden.
  • Step #11 Brush tops with melted margarine.
  • Step #12 Yield: about 12 biscuits.
  • Step #13 (For a cheesy variation, decrease amount of ham to 1 c & stir in the 1/2 c cheddar cheese.
