Country Tea Bread Recipe

Ingredients
  • 1 1/2 c Water
  • 1 Onion; sliced
  • 2 sl Bacon
  • 2 ts Sugar
  • 1/2 ts Salt
  • 5 lb Fresh turnip greens; up to 6

Directions
  • Step #1 In a heavy skillet, cook the bacon over medium-high heat until crisp, about 6 mins.
  • Step #2 remove this from heat & drain well on paper towels.
  • Step #3 Remove all but 1 tbsp of fat from the skillet.
  • Step #4 Add the onion to the skillet & cook, until tender, stirring every once in awhile, about 5 mins.
  • Step #5 remove this from heat & set aside.
  • Step #6 Wash turnip greens thoroughly, dry well, & remove stems.
  • Step #7 Tear greens into salad-like pieces & place this in a large pot along with the water, sugar, & salt.
  • Step #8 Bring to a boil over high heat, & let simmer until tender, reduce heat to low, about 15 to 20 mins.
  • Step #9 Break the bacon into pieces.
  • Step #10 Remove the greens from the heat, stir in the the bacon & onions, & serve at once.
