Country-style Pork Ribs With Green Chile Sauce Recipe

Ingredients
  • 4 Carrots
  • 150 g Rasher of smoked bacon.
  • 4 Leeks
  • 1 Jar gherkins.
  • 4 Turnips
  • 1 1/2 kg Slightly salted shoulder of pork.
  • 1 Onion
  • Pepper mill.
  • 1 Cabbage
  • 2 Garlic cloves.
  • 1 Bouquet garni.
  • 4 Potatoes

Directions
  • Step #1 1 The day before: soak the shoulder of pork in water.
  • Step #2 2 The next day: peel & wash the carrots & turnips.
  • Step #3 Cut the carrots in half, leave the turnips whole.
  • Step #4 Split the leeks lengthways to remove the earth inside, wash them.
  • Step #5 Remove the outer leaves of the cabbage, wash & cut it in half.
  • Step #6 Peel the onion & garlic.
  • Step #7 3 Fill a large pan with water & bring to the boil, put in the shoulder of pork with the bacon to cook.
  • Step #8 When the water boils again, turnips, leeks, add the carrots, cabbage, onion & garlic.
  • Step #9 Add the bouquet garni & a twist of the pepper mill.
  • Step #10 Cover the pan, lower the heat & let simmer for 2 hrs.
  • Step #11 4 Peel & wash the potatoes & cut into four.
  • Step #12 Add them to the pot.
  • Step #13 Simmer for another 30 mins.
  • Step #14 5 Remove the pieces of meat & arrange on a serving dish, surrounded by the vegetables.
  • Step #15 Serve hot.
  • Step #16 Campanile tip: serve this with gherkins.
