Courgette Flowers Stuffed With Goats' Ricotta Recipe

Ingredients
  • 1 lg Onion; finely sliced
  • 2 Cloves garlic; crushed
  • 1 lb Courgettes; thinly sliced
  • Salt & freshly ground black pepper to taste
  • 9 Free-range eggs. lightly beaten
  • 1/2 ts Turmeric
  • 4 oz Butter
  • 2 tb Fresh parsley; finely sliced

Directions
  • Step #1 1.
  • Step #2 Preheat the oven to 190?C/375?F/gas mark 5.
  • Step #3 Melt two-thirds of the butter in a heavy frying pan & saut? the onion & garlic until softened.
  • Step #4 2.
  • Step #5 Add the courgettes & cook while stirring over a medium heat until they are lightly browned & all the liquid has evaporated from the pan.
  • Step #6 3.
  • Step #7 Allow the mixture to cool & transfer to a bowl.
  • Step #8 4.
  • Step #9 stir in the the eggs, parsley, turmeric & salt & black pepper to taste.
  • Step #10 5.
  • Step #11 Melt the remaining butter & brush it on the inside of a 9" non-stick casserole dish.
  • Step #12 Pour the egg mixture in & bake for 30 mins or until nicely set.
  • Step #13 6.
  • Step #14 Remove the dish from the oven & if you wish brown the top under a hot grill.
  • Step #15 allow this to cool.
  • Step #16 7.
  • Step #17 Turn the eggah on to a serving dish & cut into thin wedges.
