Courgette Griddle Cakes Recipe

Ingredients
  • Vegetable oil for frying
  • 60 g Cornflour
  • 50 ml White wine vinegar
  • 5 Freshly-snipped basil leaves
  • 1 sm Aubergine; sliced
  • 1 sm Onion; sliced
  • 2 Courgette flowers
  • 50 ml Olive oil
  • 300F ml Soda water
  • 2 Cloves garlic; crushed
  • 2 Beef tomatoes concasse
  • 1 Red pepper; sliced
  • 1 tb Tiny capers
  • Salt & pepper
  • 500 g Goats' ricotta
  • 250 g Plain flour
  • 50 ml Olive oil
  • 1 Courgette; sliced
  • 300F ml Lager

Directions
  • Step #1 Saut? the onion in the olive oil until soft.
  • Step #2 Add pepper & cook for a further 5 mins.
  • Step #3 Add the courgette & aubergine & cook for 5 mins, then add the tomato & continue cooking for 15 mins.
  • Step #4 Add the white wine vinegar & reduce by half.
  • Step #5 Finish with a little more olive oil & Spice up this with salt & pepper.
  • Step #6 stir in the the sliced basil & set aside.
  • Step #7 Mix the ricotta & capers together & Spice up.
  • Step #8 Put this mixture into a piping bag & fill the courgette flowers.
  • Step #9 Make a batter with the flour, cornflour, lager & soda water.
  • Step #10 Heat enough oil to deep fry the courgette flowers.
  • Step #11 Dust them with a little flour, dip in the batter & quickly fry in the hot oil.
  • Step #12 Remove & dry on a paper towel.
  • Step #13 Spoon the vegetable dressing over each plate & place three courgette flowers on top.
