Couscous Salad With Peppers, Olives, And Pine Nuts Recipe

Ingredients
  • 1/4 c Lemon juice
  • 1/4 c Black or green olives,pitted
  • 3 Anchovies, rinsed & sliced
  • 1 Head radicchio, shredded
  • 8 oz Green beans, cooked & cut in thirds
  • 1/4 c Olive oil
  • 3/4 ts Salt, divided
  • 3 Tomatoes, cut in wedges
  • Fresh parsley leaves
  • 1 tb Capers
  • 1 c Boiling water
  • 1 c Couscous
  • 1/4 ts Pepper
  • 1/4 ts Ground cumin
  • 1 6 oz. can tuna, drained and broken in chunks

Directions
  • Step #1 1.
  • Step #2 To prepare dressing, olive oil, mix lemon juice, in a small bowl, 1/2 tsp.
  • Step #3 salt & pepper.
  • Step #4 Reserve.
  • Step #5 2.
  • Step #6 Place couscous, cumin & remaining 1/4 tsp.
  • Step #7 salt in a square 8 inch baking dish.
  • Step #8 Pour in boiling water.
  • Step #9 Cover dish with foil and let this stand for 15 mins.
  • Step #10 Fluff couscous with a fork.
  • Step #11 Cool slightly.
  • Step #12 3.
  • Step #13 In a large mixing bowl, red onion, beans, tuna, artichoke hearts & juices, mix couscous, capers & anchovies.
  • Step #14 Add dressing and toss to mix.
  • Step #15 Taste & adjust Spice upings.
  • Step #16 4.
  • Step #17 Arrange radicchio on individual serving dishes or platter.
  • Step #18 Spoon salad over lettuce.
  • Step #19 Garnish with olives, tomato wedges & parsley leaves.
