Couscous With Roasted Tomato Recipe

Ingredients
  • 2 tb Unsalted butter
  • 3 Scallions; thinly sliced
  • Salt to taste
  • 3 c Homemade chicken stock or broth
  • 1/4 c Fresh mint; sliced
  • 1/2 c Raisins
  • 1/3 c Toasted; slivered almonds
  • Cinnamon stick
  • 2 c Couscous

Directions
  • Step #1 In a saucepan mix raisins, scallions, cinnamon stick, butter, stock, & salt to taste & bring to a boil.
  • Step #2 stir in the couscous, cover & remove this from heat.
  • Step #3 Allow to sit for 5 mins.
  • Step #4 Uncover, fluff couscous with a fork, & stir in the almonds.
  • Step #5 Serve warm at room temperature.
  • Step #6 Yield: about 2 1/2 to 3 c.
