Step #1 preheat your trusty oven to 350 degrees.
Step #2 Oil a large cast-iron skillet & place skillet in the oven to heat the oil.
Step #3 mix cornbread mix, sour cream & egg.
Step #4 mix well.
Step #5 Add cheddar cheese, pimentos & jalapeo peppers.
Step #6 Mix all ingredients, bearing in mind that batter will become very thick.
Step #7 Remove hot skillet from oven & pour batter into skillet.
Step #8 Bake for 20 to 25 mins or until top of cornbread is golden brown.
