Step #1 Mash up the cooked potaotes, with a little butter, curry powder, coriander & double cream then add a little sliced green chilli, a red onion & then the crab meat.
Step #2 Spice up.
Step #3 Mould into croquette shaped pieces about 85g-110g in weight (3-4 oz).
Step #4 place this in the Spice uped flour,the beaten egg & then the breadcrumbs.
Step #5 Start to shallow fry in some oil while you make the relish.
Step #6 Chop the cucumber, red onions, green peppers & garlic.
Step #7 Deseed and chop the flesh of the tomatoes.
Step #8 Spice up & mix with some sliced fresh coriander, juice & zest of the limes & some olive oil.
Step #9 Drain the croquettes & serve on a plate with the relish on the side.
